Sencha Miso Paste

Perfect for BBQ, grill and fry. Goes well with fish. Preparation time: 10 minutes 5g sencha 60g red miso paste 50g brown sugar 50cc mirin *Mirin is a sweet sake used as seasoning. Mix all the ingredients well in a bowl. Shift mixture into a pan and heat on slow flame. When it starts to bubble and becomes shiny, turn off heat.

Finely Ground Sencha Latte

A taste is like a matcha latte! Preparation time: 5 minutes  1-2 tsp finely ground sencha (Yamakai or Yutakamidori), sifted  ½ cup hot water ½ cup milk 2 tsp caster sugar Finely ground sencha for decoration (optional)       Combine finely ground sencha and sugar in a cup; add hot water and mix well. Heat milk in a pan. Whip with a milk steamer. Add formed milk on top of finely ground sencha. Dust finely ground sencha if you like. Note: In step 1, please add cold water (less than 10°C)  if Yutakamidori variety is used.

Hojicha Latte

Preparation time: 5 minutes 1 heaped tbsp hojicha leaves ½ cup water ½ cup milk for latte ¼ cup milk for forming 1tbsp caster sugar One small hojicha leaf for decoration       Boil water in a pan; add hojicha leaves. Simmer for 1 minute. Add milk and sugar; Stir once and simmer for 3 minutes. Microwave milk in cup for 1 minute; form using a milk steamer. Set a tea strainer on cup; pour tea. Finely Ground Sencha Marble Cake

Preparation time: 20 minutes  Baking time: 40 minutes 5g finely ground sencha 10g caster sugar 90g caster sugar 2tbsp hot water 120g plain flour 5g baking powder 40g plain yogurt 60g extra virgin olive oil 2 eggs 2tsp vanilla essence   Preheat oven to 180degree fan forced. Grease and line 18x8x8cm pan. In a medium bowl, sift finely ground sencha, sugar (10g) and add hot water; mix until smooth. Green Tea Chocolate Ganache

This ganache has full of green tea flavour and a pleasant sweetness. Preparation time: 15 minutes: Refrigeration time: 3 hours 190g white chocolate 10g unsalted butter, melted 90ml fresh cream 10g honey 10g finely ground sencha 2 heaped tsp cornflakes       Line a mini muffin tin with 12 mini patty pans.
