How to Make Hojicha in a frying pan on Stovetop
Making your own hojicha does not require any skill. All you need is sencha or shiraore (old or new) in your pantry and a frying pan. There are only four steps required.
1 Heat a frying pan; once it becomes hot, turn off the heat and place the pan on a damp towel for two seconds.
2 Place the pan on the oven without heat and put sencha, then cover for two minutes.
3 Turn on the oven on high flame. Stir it with a wooden spatula for 30 to 60 seconds or until its colour changes brown and nice roasted aroma comes out from the leaves; turn off the heat.*Turn on a ventilating fan as smoke will rise.
4 Spread it onto a paper towel to cool it down.
5 To taste freshly-made hojicha, place it into a teapot, pour boiled water and brew for 30 seconds.

Frothy Matcha Latte
Hojicha Latte

Preparation time: 5 minutes
- 1 heaped tbsp hojicha leaves
- ½ cup water
- ½ cup milk for latte
- ¼ cup milk for forming
- 1tbsp caster sugar
- One small hojicha leaf for decoration
- Boil water in a pan; add hojicha leaves. Simmer for 1 minute.
- Add milk and sugar; Stir once and simmer for 3 minutes.
- Microwave milk in cup for 1 minute; form using a milk steamer.
- Set a tea strainer on cup; pour tea.
- Add formed milk; decorate a tea leaf in the centre.
Note: Hojicha has less caffeine than other tea so you can drink any time of a day.
Japanese Tea Dorayaki Pancake

Japanese sweet for everyone.
Preparation time: 5 minutes: Cooking time: 20 minutes
- 90g plain flour
- 1tsp finely ground sencha
- 1tsp baking powder
- 30g sugar
- 1 egg, beaten
- 2 tsp mirin *Mirin is a Japanese sweet seasoning.
- 100cc milk
- 1 packet sweet bean paste
- Preheat a frying pan.
- Sift flour, finely ground sencha and baking powder in a bowl.
- Add sugar, egg and mirin into mixture.
- Add milk to dough; mix well.
- Drop a spoonful of dough onto the heated frying pan.
- Fry each side for one minute.
- Take out the pancake and keep it in a damped towel.
- Repeat for the rest of dough.
- Place sweet bean paste on a pancake and cover with another pancake.
Sencha Miso

Perfect for BBQ, grill and fry. Goes well with fish.
Preparation time: 10 minutes
- 5g sencha
- 60g red miso paste
- 50g brown sugar
- 50cc mirin *Mirin is a sweet sake used as seasoning.
- Mix all the ingredients well in a bowl.
- Shift mixture into a pan and heat on slow flame.
- When it starts to bubble and becomes shiny, turn off heat.
Green Tea Tiramisu

‘East-Meets-West’ dessert! Preparing in individual glasses keeps leftover tiramisu nice and clean.
Preparation time: 15 minutes: Refrigeration time: 4 hours
- 100g caster sugar
- 20 sponge fingers
- 2 tsp finely ground sencha (Yutakamidori), sifted
- 6tsp warm water
- 1 pack Mascarpone cheese
- 300g fresh cream
- Finely ground sencha (Yutakamidori) and caster sugar for dust
- In a flat plate, mix finely ground sencha and warm water to make paste.
- In a medium bowl, mix mascarpone and sugar.
- In another bowl, whip fresh cream; add into cheese mixture.
- Dip a sponge finger in finely ground sencha paste at a time; place in a serving plate (20x20x5cm) in order to make a bottom layer.
- Cover bottom layer with a half of the cheese mixture.
- Dip a sponge finger in finely ground sencha paste at a time; place them on top of step5.
- Pour rest of cheese mixture on top of the second layer of sponge fingers.
- Keep it in a fridge at least four hours.
- Take out from fridge and dust the top with finely ground sencha and sugar.
